I am sure most of you know, but just in case, a perennial plant/vegetable is a plant that lives for more than two full growing seasons. It basically grows and crops each year before dying back in the Winter and starting over again in the Spring. You might be able to tell from the photo that one of my favorite perennial vegetables is asparagus! I love asparagus and it is an excellent vegetable to grow as it is usually expensive to buy at the store and once you plant your asparagus bed it will keep producing year after year for 10-20 years, depending on how well you manage it.
I think every garden should have some perennial vegetables as they keep giving year after year, and some like artichokes and Jerusalem artichokes can be planted on the margins around the edges of your garden.
